Potato Pancakes

These are easy to make and very good!

Potato Pancakes

2 cups leftover mashed potatoes
1/4 cup flour
1-2 tsp parsley
2 TBSP chopped onions
salt and pepper to taste

Mix all together. Put a skillet over high heat with a pat of butter. Drop by spoonfuls onto the pan. When bubbles start to form, flip. Cook 2 minutes on second side.
