Taffy Apple Salad

This is one of Don's favorite salads. I made this for Don's dad's birthday dinner.

Taffy Apple Salad

2 c marshmallows
1 large can pineapple tidbits or chunks,drained--save the juice.
8 oz cool whip
1 egg
1 T white vinegar
1/2 c sugar
1 T flour
4 cups unpeeled apples
2 cups cocktail peanuts

Mix marshmallows and pineapple together. Cover and
refrigerate overnight. In a saucepan, mix pineapple
juice, egg, sugar, flour and vinegar. Boil until
thick, stirring occasionally. Cool. Cover and
refrigerate overnight. Next day, combine all and
serve.

I have made this all the same day and it is as good.
