Black Bean Soup

This recipe comes from a friend in Racine, WI, Janice Schulz. We love black beans and love this soup.

Black Bean Soup

2 (15 oz) cans Black Beans, drained
1 (14 1/2 oz) can vegetable or chicken broth
1/2 cup finely chopped onion
1/2 cup green pepper
1 TBS chopped fresh cilantro
1/4 tsp cayenne
2 minced garlic cloves
1/4 tsp salt

Place half a can of beans and broth in blender.
Cover; blend til smooth. Place in medium saucepan.
Add remaining beans and all the remaining ingredients to saucepan.
Bring to a boil. Reduce heat; cover and simmer 15 minutes.
Stir occasionally.
Top each serving with sour cream and jalapeno slices.
Makes 4 (1 cup) servings
