Chicken Wings

I had a bag of chicken wings in the freezer that I needed to use before the move. I don't remember where I got this recipe, but it was easy to put together and tasted good.
Chicken Wings

5 pounds chicken wings, cut in 3 pieces
2 cups brown sugar
1/2 cup mustard
1/2 cup ketchup
4 tablespoons Worcestershire sauce

Put chicken in slow cooker. Combine remaining ingredients and pour over chicken. Cook on low for 6 to 8 hours. Serves 10.

Easiest Cake Ever

This is an easy recipe to put together. Sometimes it is called Dump Cake. I don't remember where I found this. Serve this with coolwhip.

1 can crushed pineapple
1 can cherry pie filling
1 yellow cake mix [[ used dry right from box ]]
1 stick butter, melted

In a 9x 13, put in order given. Spread pineapple evenly, same with pie filling. Add dry cake mix, sprinkle evenly and then drizzle butter over the top.
Bake at 350 until golden- about 25-30 minutes.

Bobby Flays Mesa Hot Sauce Marinated Chicken

This was a tasty recipe, but was WAY too spicy. See my notes--we will make this again, but with less spice.

1 cup red wine vinegar
3 Tablespoons chipotle puree (to make chipotle puree, place 1 can of chipotle peppers in adobo sauce in a food processor and pulse until pureed)*******
1 1/2 Tablespoons Dijon mustard
2 Tablespoons honey
1 teaspoon salt
4 boneless, skinless chicken breasts

In a saucepan, combine the vinegar, chipotle, Dijon, honey, and salt over medium heat. Bring to a boil. Reduce heat to simmer and allow the sauce to thicken just a bit; stirring occasionally, for about 5-10 minutes. Remove from heat and allow to cool. Reserve half of the cooled sauce. Place the chicken in a resealable bag or a shallow dish and pour half of the sauce over the chicken. Allow to marinate in the refrigerator for 4 hours.

Preheat grill to 375 degrees F. Oil the grill grates. Remove chicken from bag and discard marinade. Place the chicken directly over the fire and grill about 8-10 minutes per side or until the internal temperature registers 165 degrees F. **Optional - baste the chicken, while it's grilling, with half of the reserved sauce. Remove from grill and allow to rest for a few minutes before cutting into it. Serve with any remaining sauce and enjoy

******We used 2 T and this was WAY too spicy.  I would try 1 T or 3 tsp next time or even less!  Very good flavor.

ONION DILL ROLLS

I have had this recipe for a long time and finally tried it. Don't know why I waited so long. I made 12 rolls and 2 loaves of bread from this. It was great. My girls said it tasted like break from Great Harvest Bread.

Mix:
3 c. warm water
4 tbsp. melted margarine
4 tsp. sugar
2 tbsp. yeast

Add and Mix for 10 min:
2 tbsp. dill
3 tbsp minced dry onion
7 cups flour
2/3 c. powdered milk
1 tbsp. salt

*Divide in 1/2 and in 1/2 again to make 24 balls. Grease two muiffin tins. Brush with egg and poppy seed. Rise until double (2 hours). Bake at 350 for 12 min.

*Or make 3 loaves and bake 25 min.

This is another wonderful recipe from my wonderful mother! She got this recipe from her friend Susan. They are super good! I love these rolls. This last time I made them I didn’t put poppy seeds on top and they were still good. Enjoy!!

Red Garlic Mashed Potatoes

These were delicious and will be made many more times at our house. We all loved these.  Sorry about the dark picture.

8 medium red potatoes, cubed
2 teaspoons crushed garlic
1/2 cup butter or margarine
1/4 cup half-and-half cream
2 tablespoons white sugar
1/4 teaspoon steak seasoning
1/4 teaspoon garlic powder

Place the potatoes into a large pot, and fill with enough water to cover. Add 1 teaspoon of the crushed garlic to the water for flavor. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork.

Drain the potatoes, and add the butter. Mash until the butter is melted. Mix in the half-and-half, sugar, steak seasoning, garlic powder and remaining garlic. Mix potatoes with an electric mixer until smooth.

Crockpot Pizza Steak

This was an easy dish to put together and it tasted great. We served it over noodles.

Makes 6 servings

2 pounds beef round steak
2 tablespoons flour
2 teaspoons salt
1/4 teaspoon pepper
1/3 cup shortening
1 medium onion, thinly sliced and separated into rings
1 can (8 ounces) tomato sauce
1 can (8 ounces) pizza sauce
1/2 cup water
1/2 teaspoon sugar
1/2 teaspoon dried oregano, crushed
Hot cooked spaghetti

Trim fat from meat and cut into 6 equal pieces.
Combine the flour, salt, and pepper. Coat meat with flour mixture and pound to 1/3-inch thickness. In skillet, brown meat slowly in hot shortening.
Place onion rings in bottom of crockpot. Place meat pieces on top of onion.

Combine the tomato sauce, pizza sauce, water, sugar, and oregano; pour over meat in crockpot.

Cover and cook on low-heat setting for 8 to 10 hours. Serve meat and sauce over hot cooked spaghetti.

John's Note: I like to add 1/2 lb of pepperoni slices and 1 lb of fresh button mushrooms on top of the steak before pouring the sauce over it.

Broccoli Cauliflower & Carrots with Parmesan Bread Crumbs

I had a big bag of broccoli, cauliflower and carrots in the freezer to use up before our move. I found this recipe and it was pretty good.

1 1/2 pound broccoli florets
2 pounds cauliflower flowerets
1 pound carrots -- cut 1/4-inch thick
1 tablespoon vegetable oil
4 tablespoons unsalted butter
2 cups very coarse dry bread crumbs
1/2 cup Parmesan cheese, grated
1/2 teaspoon cayenne pepper

In a large saucepan of boiling salted water cook vegetables until crisp-tender, 2 to 5 minutes. In a colander drain vegetables and refresh under cold water to stop cooking. Drain vegetables well. Vegetables may be prepared up to this point 1 day ahead and chilled, covered.
In a large heavy skillet heat oil and 2 tablespoons butter over moderately high heat until foam begins to subside and saute bread crumbs, stirring, until golden. Stir in Parmesan, cayenne and salt to taste and saute, stirring, until crisp. Bread crumbs may be prepared 3 days ahead and kept in an airtight container.

Preheat oven to 350 degrees F.

In skillet melt remaining tablespoon butter over moderate heat and in it toss vegetables with salt and pepper to taste. Sprinkle vegetables with bread crumbs and toss to combine. Transfer mixture to a baking dish and bake, uncovered, 10 minutes, or until just heated through.

Pizza dough

I was looking for another pizza dough recipe while we were 'eating out of the pantry'. I made 2 pizzas out of this recipe to fill my 17 inch pans. Very good and easy to make.

makes 3 pizzas

1 1/2 cups warm water
2 tsp dried yeast
Pinch of sugar
4 cups plain flour
1 tsp salt
1/4 cup olive oil, plus extra for brushing

1. Combine the water, yeast and sugar in a small bowl. Set aside for 5 minutes or until foamy. Combine the flour and salt in a large bowl and make a well in the center. Add the yeast mixture and oil. Use a round-bladed knife in a cutting motion to mix until the mixture is combined. Use your hands to bring the dough together in the bowl.

2. Brush a bowl lightly with oil. Turn the dough onto a lightly floured surface and knead for 10 minutes or until smooth and elastic. Place in the prepared bowl and turn to coat in oil. Cover with plastic wrap and set aside in a warm, draught-free place to rise for 30 minutes or until dough doubles in size.

• You can prepare this recipe up to 1 hour before serving. Prep: 15 mins

Melt in Your Mouth Mint Brownies

These were quite tasty! They make a lot and would be great for a crowd. I, of course, made them for the 4 of us so temptation was around for a while!

2 c. butter, melted
3/4 c. cocoa
2 1/4 c. sugar
6 eggs beaten

Combine and mix well, add to the following:

2 c. flour
1/4 t. salt
3 t. vanilla

Bake in a TEXAS sheet cake pan OR two 9x13" baking pans. Bake at 350 for 15 minutes (mine took closer to 22 minutes, so watch yours) OR if you use 2- 9x13" cook for 25-30 minutes. DON'T over bake, this will cause them to dry out. Cool completely. Chill.

Frosting:
4 c. powdered sugar
1/2 c. butter, melted
5 T. milk
10 drops green food coloring
4 t. mint extract

Mix all ingredient until well blended. Spread frosting on chilled brownies, then chill again. Melt
a bag of chocolate chips and spread for top layer. Chill. Cut into squares and serve with a scoop of chocolate chip mint ice cream!

Sweet Barbecue Meat Loaf

We loved this meat loaf and will make it again. It was easy to put together and I had the habenero jelly that I canned.

adapted from The New American Heart Association Cookbook, 8th edition

1/2 cup barbecue sauce (lowest sodium available)
1/4 cup habanero gold jelly* slightly melted
1 pound extra lean ground beef
1/2 medium red bell pepper, finely chopped
1/2 medium sweet onion, finely chopped
1/3 cup uncooked quick-cooking oatmeal
2 egg whites
*the original recipe calls for 1/4 cup all-fruit raspberry spread plus 1/8 teaspoon crushed red pepper flakes

Preheat oven to 375°F.
Line a baking sheet with aluminum foil. Lightly spray with cooking spray.
In a small bowl, stir together the barbecue sauce and jelly.

In a medium bowl, combine 1/4 cup barbecue sauce mixture and the remaining ingredients. Shape the mixture into an oval and place on baking sheet.

Spoon the remaining barbecue sauce mixture on the top and sides of the meat loaf.

Bake for 50 minutes, or until the meat loaf registers 160°F on an instant-read thermometer. Let the meat loaf stand for 5-10 minutes before serving.

Chocolate Pecan Pie Bars

These were absolutely divine! We didn't have enough pecans(remember we were cleaning out the cupboard) and used some walnuts in the mix. YUMMY!

Makes one 9" x 13" pan, about 32 bars

1/2 cup unsalted butter, room temperature
2 tablespoons unsalted butter, melted
1/4 cup light brown sugar, packed
1 1/4 cups all-purpose flour
1/2 teaspoon salt
3 large eggs
3/4 cup light corn syrup
1/2 cup granulated sugar
1 cup semi-sweet chocolate chips (Original recipe calls for 2 cups)
2 cups pecans, coarsely chopped

1. Preheat oven to 350. Line bottom and sides of a 9×13 inch baking pan with aluminum foil.

2. In the bowl of an electric mixer, beat 1 stick room-temp butter, brown sugar, flour,and salt until coarse crumbs form. Pour mixture into prepared pan; press firmly into bottom.

3. Bake until lightly browned, 25-30 minutes. Let cool, 10 minutes.
4. Meanwhile, in same large bowl, mix eggs, corn syrup, granulated sugar, and 2 TBS melted butter until well combined. Add chocolate chips and pecans; spread over crust.

5. Bake until set, 25-30 minutes. Cool completely in pan before lifting out (use foil to lift). Cut into 32 bars. (I cut them into 16 bars)

I am NOT a coffee drinker at all, but my girls and hubby are. Kathleen and Jenna first had this drink at the Coffee Bean in San Francisco. They got the powder and started making the drinks. They love them!

Homemade Baked Beans Recipe

We made these as we were cleaning out the pantry and fridge. They were very good, but I think they needed to soak longer than just over night or else cook a bit longer. We cooked them for 8-9 hours and they weren't as tender as we like them.

1.5 lbs (3 cups) dried small white beans, or navy beans
2.5 cups chicken broth
1 tablespoon salt
1 (6 ounce) can tomato paste
1/2 cup honey
1/2 cup molasses
2 tablespoons dried mustard
Optional: 2 garlic cloves, minced(Beth used this)
Optional: sautéed chopped onion(Beth used this)

Soak navy beans overnight. I’ve soaked longer — up to 12 hours — for even softer baked beans.

Drain beans and rinse off. Put beans into Crock Pot or slow cooker.
Add all the ingredients. Stir all ingredients together. Cover Crock Pot and cook 6-7 hours on high, or 10-12 hours on low. These slow cooking times are approximate, so cook until the beans are soft and the sauce is rich. Add water to the Crock Pot, if needed.

Bacon and Cheddar Muffins

These were very good. We ate them with dinner, but they would be great as a snack or as breakfast.

Oven: 400 Bake time: 16-19 minutes
Makes 10 muffins or 5 large muffins

4 strips of bacon
1 egg
2 cups of Bisquick
3/4 cup of cheddar cheese
3/4 cup of milk
2 TBS butter, melted
1/4 tsp chili powder

Preheat oven to 400 and line muffin tin with paper liners.(we just greased the tins and didn't use these)
In a large skillet, cook bacon until nice and crispy. Remove from skillet, allowing bacon to cool, crumble and set aside.

In a large bowl lightly whisk egg. Add Bisquick, milk, butter, and chili powder and mix until combined. Fold in cheddar cheese and crumbled bacon. Spoon batter into prepared muffin tin- filling each about 3/4 full.

Transfer to oven and bake 16-19 minutes or until muffins have lightly browned.
Allow to cool slightly before removing from pan.

Jim's Famous Hamburger Recipe

We made these when we were trying to use up things from the fridge and freezer. They were simple to make and the rosemary gave them a great flavor. A little different from just regular burgers thrown on the grill.

1 lb hamburger meat
2 heaping tablespoons of chopped fresh rosemary leaves (not the stem)
2 Tbsp A1 sauce
Salt and pepper to taste (perhaps half a teaspoon of each)
Buns
Lettuce
Tomatoes, sliced
Onions, sliced
Avocado, peeled, pitted and sliced
Mayonnaise, ketchup, mustard

Mix the rosemary and A1 sauce into the hamburger meat, distributing evenly. Add salt and fresh ground pepper. Form out the hamburger patties. If the meat is low-fat, you may want to add some grapeseed oil or olive oil to the mixture, or after the patties are made (but before cooked), rub some oil over them. Place on a hot grill or grill pan.

If you are indoors with a grill pan, be sure to use your stove fan. If on grill pan, lower the heat to medium high. Grill on one side until you can see the juice begin to run at the surface. Flip over and grill on the other side, again until you can see some juice coming through. If you wish, grill the buns on remaining grill surface. Onions can be either served fresh with the hamburger or sautéed a little in olive oil.

Serve burgers with lettuce, tomatoes, onions, avocado, mayo, ketchup, and or mustard. (For the low-carb version skip the bun.)

Roasted Potato Wedges

Potatoes (number And Variety Of Your Choosing: Russets Work Well)
¼ cups (approximately) Olive Oil
Salt To Taste
Fresh Herbs, to taste
Optional Ingredients
2 Tablespoons Melted Butter
Garlic, Minced
2 Tablespoons (to 3 Tablespoons) Balsamic Vinegar
Cayenne Pepper
Paprika

Preheat oven to 450 degrees
Wash potatoes. Cut potatoes into wedges.
Toss with oil, butter, salt, pepper, and whatever else you’d like: garlic, balsamic, spices, etc.
Roast for 15 minutes.

Shake around. Stir.  Roast for another 20 minutes. Check ‘em. Keep cookin’ ‘em.
Take ‘em out. Check the seasoning. Add more if necessary. Sprinkle with herbs.
Serve immediately.
