Peanut Butter Oatmeal Cookies

These are easy to make and taste great.  Since Don likes crunchy cookies, I baked them for 14 minutes.

1 cup (2 sticks) butter or margarine, softened

¼ cup shortening

2 cups packed light brown sugar

1 Tablespoon milk

2 teaspoons vanilla extract

1 egg

2 cups all purpose flour

½ teaspoon baking soda

½ teaspoon salt

1-2/3 cups (10 ounce pkg) peanut butter chips

1-1/2 cups quick cooking oats

½ cup chopped walnuts

Heat oven to 375 degrees.

Using a large mixing bowl beat butter, shortening, brown sugar, milk, vanilla and egg until light and fluffy.  Add remaining ingredients and mix in until well blended.  Drop by rounded teaspoonfuls about 2 inches apart on a baking sheet sprayed lightly with non-stick spray or use parchment paper.

Bake until light brown for 10-12 minutes for SOFT cookies or 12-14 minutes for crisp cookies…don’t OVERBAKE.

Leave on the cookie sheet for approximately 6 minutes and then remove and put on a wire rack. 

This recipe makes about 6 dozen cookies.  You can make a larger cookie—you just need to
adjust baking time.  Beth used a cookie scoop and got 4 dozen.
