Easy Pecan Pie Bars

These were quick and easy to make.  I used a homemade sugar cookie mix and it worked great!  We liked the chocolate addition to the bars.
Easy Pecan Pie Bars

Yield: 36 bars

Crust:

1 pouch (1 lb 1.5 oz.) Betty Crocker sugar cookie mix Beth used this
1/2 cup butter or margarine, softened
1 egg

Filling:

1 cup packed brown sugar can do ½ c corn syrup, ½ c brown sugar
2 tablespoons all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla
2 eggs
1 1/2 cup chopped pecans
1 cup chocolate chips


Heat oven to 350 degrees. Spray bottom of 13x9 inch pan with cooking spray.

In a large bowl, stir all of the crust ingredients until dough is formed. Press dough into bottom of the pan using floured fingers. Bake 20 minutes.

Meanwhile, in a medium bowl, stir all pecan filling ingredients until well blended. Pour over hot crust.

Bake 15 minutes or until center is set. Cool completely, about two hours. Cut into 9 rows by 4 rows. Store covered in refrigerator.
