Julie's Old Fashioned Frito Pie

I saw this recipe and knew would like it. I made it the night I found it. It was very good.

Julie's Old Fashioned Frito PieAdapted from

1 (10 1/2 oz) bag of Frito corn chips
1 lb cooked ground beef, seasoned with 1 pkg taco seasoning
¼ c diced onions
3 c. shredded cheese, divided
1 c. red enchilada sauce  **We used a 10 oz can
1 (10 1/2 oz) can cream chicken soup
1 small can diced chilies (optional)

In a large mixing bowl, combine corn chips, cooked ground beef, onions, 1 1/2 c. cheese, enchilada sauce, chilies (drained) and cream of chicken soup. Mix thoroughly. Pour into a 2 quart casserole dish. Top with rest of the cheese. Bake at 350 degrees, covered, for 20-25 minutes. Remove from oven. Let stand for 5 minutes. Serve with diced tomatoes, diced avocado's and a dollop of sour cream.
