Baked Chicken Thighs

I have been trying to eat more low carb/high protein and this recipe fits the bill! I have made it at least 3 times and have used both bone in and boneless thighs. I really like how moist the meat is.

Baked Chicken Thighs


 
4 bone-in, skin on chicken thighs(Beth took skin off and also used boneless one time)
1 tablespoon olive oil
1 shallot, minced (Beth used onion, chopped fine)
3 cloves garlic, minced
Sea salt and pepper to taste

Preheat oven to bake at 425.

Rinse chicken thighs under cold water and place in a broiler pan.

Pat thighs dry with a paper towel.

Place shallots and garlic on the meat.

Lightly brush olive oil on the chicken, and sprinkle with salt and pepper.

Bake for 35 minutes, or until juices run clear.
