Healthy Banana Cookies

I had a friend come to town who was a vegan.  I wanted to make sure I had something sweet for her to eat.  This worked.  I think it was the first time I ever used dates in baking.  They turned out great!
Healthy Banana Cookies
All Recipes

3 ripe bananas                                                     
2 cups rolled oats                                                 

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, mash the bananas. Stir in oats, dates, oil, and vanilla. Mix well, and allow to sit for 15 minutes. Drop by teaspoonfuls onto an ungreased cookie sheet.

Bake for 20 minutes in the preheated oven, or until lightly brown
