Slow Cooker Chicken and Gravy

 This was a fix it and forget it recipe.  I used brown gravy after reading reviews and we loved it!

Slow Cooker Chicken and Gravy

adapted from

2 lbs boneless, skinless chicken breasts
2  packets dry chicken gravy mix or brown gravy mix or a package of each
1 10 oz. can cream of chicken soup
1 3/4 cups chicken broth
1/2 t black pepper
1 t minced onions
1/2 t paprika
1/2 t thyme
1/2 t garlic powder

Empty the gravy packets, cream of chicken soup, water and spices in a slow cooker. Whisk until the gravy is smooth. Add chicken breast.

Cook on low for 8 to 10 hours. Serve on mashed potatoes.

Two Hour Buns or Breadstick

These were SO good and very easy to make.  These would be perfect for a crowd!

Two Hour Buns or Breadstick

Melvin and Beth Ann Beachy Beachy Family Favorites

2 T yeast

2 c water, divided

1/2 c sugar

1/2 c butter

2 eggs

1 t salt

6 c flour

Dissolve yeast in 1 c warm water.  Cream sugar and butter.  Heat 1 c water and add it to butter and sugar mix.  Add eggs and beat well.  Add the yeast mixture, salt and flour and mix well.  Let rise for 1 hour.  

Punch down and make into rolls or breadsticks***  (see below).  Let rise another hour and bake at 350 for 10-15 minutes.  

Breadsticks:  After the first rise, press the dough onto a rimmed jelly roll pan sprayed with cooking spray and sprinkled with cornmeal.  Drizzle melted butter over the dough and sprinkle with Italian season.  Cut into strips with a pizza cutter.  Let rise for 45 minutes-1 hour.  Bake at 350 for 15 minutes or until golden.  Remove from oven and spread more butter over the top and sprinkle with parmesan cheese.  Return to the oven for a few minutes.  YUM!

Microwave Caramel Corn or Puff Corn

I made this for the Sept 20th Monday night Packer game.  I was shocked to see I had never put this recipe up.  I have been making this for most of my life!  So quick, easy and yummy!

Microwave Caramel Corn or Puff Corn

1 c brown sugar

1 stick butter

1/4 c corn syrup

1/2 t salt

1/2 t baking soda

1 t vanilla

4 qts popped corn or two 5 oz bags of puffed corn(cheese or plain)

Combine all ingredients except baking soda and vanilla and popcorn.  Can do in microwave or on cooktop.  Bring to a boil and boil for 3 minutes.   Take off heat and add baking soda and vanilla.  Stir well.  

Place popcorn or puff corn in a brown paper bag.  Pour in hot syrup a bit at a time and shake well each time.  

Place in microwave and cook for 1 minute and 15 sec.  Take out and shake and cook another 1 minute and 15 seconds.   

Pour on to a cookie sheet and cool.

Peanut Butter Churro Bits

I saw this recipe and started looking for the peanut butter Ritz bits.  I couldn't find them at my HEB stores.  I did find them at Aldi.  These are SO yummy!

Peanut Butter Churro Bits
Adapted from

2 boxes peanut butter ritz or similar(I used Aldi brand)
1 cup butter
1 cup light brown sugar
1 1/2 teaspoons cinnamon
2 teaspoons vanilla
3 tablespoons granulated sugar
1 teaspoon cinnamon
1/2 teaspoon kosher salt

Preheat the oven to 350°F/175°C. Line a sheet pan with parchment paper or foil.

Place the crackers in a large bowl.  
In a medium saucepan combine butter and brown sugar. Stirring consistently bring the mixture to a boil and boil for 1 minute. Remove the mixture from the heat and stir in 1 teaspoon of cinnamon and 1 teaspoon vanilla.
Pour this immediately on top of the crackers and stir well.   Pour onto the prepared sheet pan. 

Bake the crackers for 15 minutes, stirring at 7 minutes.  

While the crackers are cooking combine the granulated sugar, cinnamon, and salt. When the crackers are done remove the pan from the oven and immediately sprinkle with the cinnamon mixture. Sprinkle as evenly as you can.

Break into pieces after the crackers have cooled. Enjoy!

Sourdough Lemon Loaves

I had a LOT of sourdough started that I needed to use.  Kathleen put this together using the technique she uses for a copycat Starbucks recipe.  I took it to two Bible studies where everyone loved it!

Sourdough Lemon Loaves
adapted greatly from

1 cup vegetable oil
1 1/3 cup sugar
4 eggs
3 large lemons zested, sectioned and diced, chopped over a bowl to catch the juice
1 teaspoon lemon oil optional or 2 t lemon flavoring
3 cups unbleached flour or whole wheat pastry flour
3 teaspoons baking powder
1 teaspoon salt
2  cups sourdough starter fed or unfed
2/3 cup milk lukewarm

For Glaze:
2 1/2 cups powdered sugar 
2  tablespoons lemon juice

Heat oven to 350 degrees. Spray 2 loaf pans well.

Mix oil, sugar, eggs, lemon zest, juice, and oil in a large mixing bowl until thoroughly combined.

In a separate medium bowl, whisk the flour, baking powder and salt.

In a third bowl or 2-cup measure, combine the starter and warmed milk.

Add the flour and starter mixtures to the sugar-oil mixture alternately, starting with the flour: 1/3 flour, 1/2 starter, 1/3 flour, 1/2 starter, remaining flour. Scrape as needed, mixing just until combined.

Pour batter into prepared pans and bake for 55-60 minutes or until a toothpick in the center comes out clean.

Cool for 10 minutes in pan and then finish cooling on a rack or on the serving plate.

Mix up the glaze ingredients to the desired consistency in a small bowl.
Spread the glaze with a spatula over the still warm loaf, letting some drip over the edges.
Cool completely before cutting into slices.

Apple Praline Cake

This was so delicious.  Since it is apple season in the Midwest, PLEASE try this!  You will not be disappointed! 

Apple Praline Cake

adapted slightly from

4 eggs
2 cups granulated sugar
1 cup vegetable oil
2 teaspoons vanilla extract
1/2 teaspoon kosher salt
3 teaspoons ground cinnamon
4 teaspoons baking powder
2 cups all-purpose flour
4 medium apples, peeled, cored and diced

1/2 cup butter, melted
1/4 cup light brown sugar
2 teaspoons ground cinnamon
1/2 teaspoon kosher salt
1 c chopped pecans
1 c coarsely chopped Nilla Wafer cookies 

1/2 cup butter
1 cup light brown sugar
1/4 cup milk
2 cups powdered sugar
1 t vanilla

Preheat oven to 350°F/175°C. Coat a 9×13 inch pan with baking spray and set aside.

In the bowl of your stand mixer mix the eggs and sugar on high speed for 5 minutes. Turn mixer to medium and add in the oil, vanilla, salt, cinnamon and baking powder and mix for another minute. Turn mixer to low and add in the flour until just mixed in and finally add stir in the apples.
Pour the batter into your prepared pan and bake for 45-55 minutes, until a toothpick inserted in the center comes out clean. Leave the oven on to make the Praline Crunch

While the cake is cooling spray a large, rimmed baking sheet with cooking spray.

In a medium bowl combine the butter, brown sugar, cinnamon and salt.
Stir in the pecans and cookies and coat with the butter mixture.
Spread evenly onto the prepared pan and bake for 10-12 minutes until golden brown.
All the praline crunch to cool on the pan and then break into smaller pieces.

In a medium saucepan over medium heat melt the butter and brown sugar together. Allow the mixture to come to a boil and then reduce the heat to low, boil and stir for 2 minutes. Add in the milk, return to a boil and then remove from the heat immediately. Allow this to cool for 15 minutes. Next whisk in the powdered sugar and vanilla and pour/spread onto the cooled cake.

Top the frosting with the praline crunch pressing the crunch into the frosting.

Air Fryer Cheese Curds

We recently came back from a 2 week trip to Wisconsin, land of the cheese curds.  We ordered them, deep fried, of course, where ever we could!  We brought some home and had to try them in the air fryer!  So yummy! AND we saved a few calories this way! 

Air Fryer Cheese Curds
adapted from

1 cup all-purpose flour
dash salt
3 large eggs
1/2 t Worcestershire sauce
2 cups bread crumbs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon  paprika
8 ounces cheese curds
Oil spray

Place cheese curds in the freezer for 15-30 minutes.  

Put the flour and salt in a shallow dish.

Place the eggs and Worcestershire sauce in a second shallow dish and whisk well until smooth.

Add the bread crumbs, garlic powder, onion powder, and paprika to a third shallow dish and whisk to combine.

Preheat air fryer to 350 degrees.

While the air fryer is preheating, dip each cheese curd first into the flour, then egg, and then the breadcrumbs. Now, re dip into the egg and then bread crumbs again.  

Place the breaded cheese curds onto a baking sheet and spritz with oil spray. Spritz the air fryer basket with oil spray.

Arrange the cheese curds in a single layer in the air fryer basket.  Air fry for 4-6 minutes, checking around the 4 minute mark and watching every 1 minute after.

Cheese curds should be golden brown and crispy on the outside and the cheese should be melty.   We kept the cheese curds in a 200 degree oven until all batches were done.

Crockpot Honey Garlic Pork Chops

These were quite tasty and very easy to make.  I used bone in chops since that was what I had in the freezer, and they were falling apart tender.

Crockpot Honey Garlic Pork Chops

4-6  boneless pork chops
salt and pepper to taste
2 teaspoons minced garlic
1/2 cup ketchup
1/3 cup low sodium soy sauce
1/4 cup honey
2 tablespoons cornstarch
2 tablespoons chopped parsley, optional

Add the pork chops to the slow cooker, season with salt and pepper. 
In a small bowl, whisk together the garlic, ketchup, soy sauce and honey. Pour the sauce over the pork chops.

Cover the slow cooker and cook on LOW for 4 hours.

In a small bowl, mix the cornstarch with 1/4 cup cold water. Add the cornstarch mixture to the slow cooker.
Cook for 1 more hour or until sauce has just thickened and pork chops are tender. Sprinkle with parsley and serve.

Air Fryer, Fried Pickles

 Kathleen got an air fryer for her birthday in August.  She made these and they were so good.  She tried the jalapenos, too and we liked them!

Air Fryer, Fried Pickles and Jalapenos
adapted from

24 oz dill pickle slices
sliced jalapenos, canned
1 3/4 -2 cups breadcrumbs
1 egg
3/4 cup flour
3/4 cup buttermilk we added 2 t. lemon juice to regular milk
1/2 tablespoon dried dill
1/2 teaspoon garlic powder
Salt and pepper to taste
cooking oil spray

Spray the air fryer basket with cooking oil.

Dry the pickles /and or jalapenos completely with a paper towel.

Place flour, dill, garlic powder, salt, and pepper  in a bowl and mix to combine.  Add the buttermilk and egg to the seasoned flour, stir well. 

Add the breadcrumbs to a separate bowl.

Dredge the pickles in the flour buttermilk mixture and then in the breadcrumbs. 

Place the breaded pickles on a plate and freeze  for 15 minutes. 

Place the pickles in the air fryer. Do not stack them. Cook in batches if needed. Spray the pickles with cooking oil.

Cook for 7-10 minutes on 400 degrees flipping after 5 minutes. Each air fryer brand will cook at different speeds..

Brownies with a Twist

I was looking for a quick dessert and tried this.  It is rich, but so yummy!

Brownies with a Twist
adapted from

1 box brownie mix  and ingredients on box
1/2 can Sweetened condensed milk
1 bag chocolate chips

Prepare and bake brownies according to instructions on box.

Once baked, poke holes throughout baked brownies with a knife.

While brownies are hot, pour 1/2 a can of sweetened condensed milk over brownies. Use a spatula to spread milk evenly.

Sprinkle bag of chocolate chips over brownies and put back in the oven for 5 minutes.  Take out and quickly spread the chocolate over the top.  

Let cool and cut into small pieces.

Breakfast in a Bundt Pan

I made this when we had company.  While the flavor was good, it stuck to the pan, even after I sprayed it well.  I would use goop to coat the pan next time.  It was a bit 'heavy' but I think I would try the recipe again.

Breakfast in a Bundt Pan

6 large eggs
1/4 cup milk
1/2 tsp salt
1/2 tsp black pepper
3 cups self rising flour
2 1/4 cups cheddar cheese, divided
10 slices bacon cooked and finely crumbled *could use 3/4 c ham or cooked sausage
2 1/4 cups heavy cream
2 Tbsp butter melted
1 tsp chopped fresh chives

Preheat the oven to 425°F. Spray a standard size bundt pan with cooking spray. Do this generously. or use Goop(found here) Set aside.

In a medium-size mixing bowl whisk together the eggs, milk, salt and pepper. Scramble in a skillet over medium-high heat until firm. Set aside to cool.

In a medium size mixing bowl, use a fork to mix together the flour with 1 cup  cheese and ½ cup bacon. Make a well in the center and add the cream. Using a fork gradually work the cream through the dry ingredients until moistened.

Sprinkle 2 Tbsp reserved bacon and ¼ cupcheese evenly on the bottom of the bundt pan.

Use a regular 4-oz ice cream scoop to divide the dough. Scoop ½ of the biscuit batter onto the bottom of the pan.Use the back of a spoon or offset spatula to spread and flatten the dough slightly.

Sprinkle the biscuit dough with ½ cup cheese, scrambled eggs, remaining bacon crumbles then top with ½ cup cheese. Scoop the remaining biscuit dough over the filling. Flatten and spread slightly.
Place into the oven and bake for 25 minutes or until a toothpick inserted into the dough comes back clean.

Rest in the pan for 5 minutes then turn onto a cake plate.

Mix together the melted butter and chopped chives. Brush the bread on all sides.

Dinner Rolls in 30 Minutes

 These were THE best quick rolls.  They were soft and fluffy and really only took 30 minutes.  

Dinner Rolls in 30 Minutes

1 cup plus 2 tablespoons warm water 
1/3 cup olive oil
2 Tbs active dry yeast
1/4 cup sugar
1/2 tsp salt
1 egg
3 1/2 cups flour 

In the bowl of  a stand mixer, combine the warm water, oil, yeast, and sugar.

Allow to rest for 10 minutes until the mixture looks puffy.

Add 2 cups flour, salt, and egg into the yeast mixture using a dough hook, and mix.  Add the remaining flour gradually.

Knead it  until it becomes smooth ball. 

Shape dough into 12 balls and place in a 9x13 pan. Let dough rest for 10 minutes, and heat your oven to 400F.

Bake for 10 minutes or until tops are just golden brown.  Remove from oven, and brush tops with butter.

Sweet and Spicy Crockpot Pork Loin Roast

I got two pork loin roasts at a good price the other day.  Found this recipe and played with it a bit.  Don thought it to be a bit dry, but if you pour the sauce over it, it wasn't at all.  

Sweet and Spicy Crockpot Pork Loin Roast

1 3 pound pork loin roast
1/4 cup brown sugar
1/3 cup ketchup
2 teaspoons minced garlic
1 teaspoon black pepper
1 teaspoon salt
1/2 cup chopped green onions
1 tablespoon spicy brown mustard
1 tablespoon sriracha mustard (opt)
1 tablespoon apple cider vinegar
1 tablespoon Worcestershire sauce
1/3 cup water
1/4 teaspoon red pepper flakes
several drops hot sauce or pinch of cayenne
1/4 cup butter, sliced in Tablespoons

Place the pork loin in the crock pot. Place butter over top of the roast.  Whisk together all the remaining ingredients and pour over pork loin. 

Cook on low for 7 to 8 hours or high for 4 to 5. Serve sauce from pot over meat .  Makes 6 to 8 servings

No Soup Cheesy Hash Brown Casserole

I was looking for a potato recipe with no soup in it.  Came upon this one and added the french fried onions.  We liked it!

No Soup Cheesy Hash Brown Casserole

1 26-30 ounce bag of frozen hash browns thawed
3 tbsp butter
1/2 cup sweet yellow onion diced small
2 cloves garlic minced
2 ½ Tbsp All-Purpose flour
1/2 cup chicken broth
1/2 cup whole milk
1 cup sour cream
1 1/2 cups shredded  Cheddar cheese
3 green onions sliced
Kosher salt and fresh ground pepper to taste
1 1/2 c french fried onions

Preheat the oven to 350°F.
Coat a 9 x 13 baking dish with butter or cooking spray.

In a medium stockpot, melt the butter over medium heat. Once melted add the diced onions and cook until softened.

Add the minced garlic and cook for 1 minute.

Add the flour and whisk for an additional 2-3 minutes.

While whisking, slowly add the broth and milk. Continue to whisk until thickened, about 6-8 minutes.
Season with salt and pepper, to taste. Remove from the heat.

Add the shredded potatoes to the saucepan with the sauce. Add the sour cream, cheese, and green onions.

Stir until well combined and pour into the prepared baking dish.  Top with french fried onions, if desired.
Bake for 1 hour or until bubbly and lightly golden.

Churro Bars

These bars were over the top delicious!  We all loved them.  They were easy to make, too.

Churro Bars

1 cup unsalted butter
2 cups  Brown Sugar
2 eggs
2 teaspoons vanilla
1 1/2 teaspoons baking powder
1 teaspoon kosher salt
2 1/2 cups all-purpose flour*
1/4 cup Granulated Sugar
1 tablespoon ground cinnamon

In a medium saucepan over medium-low heat melt butter and bring to a boil. Stir butter, or swirl pan continuously until it reaches an amber color. Remove from heat and allow butter to cool for 20 minutes.

Preheat oven to 350°F. Spray a 9x13-inch baking dish with non-stick spray. Set aside.

In a large bowl combine butter and brown sugar and stir to combine. Add eggs, vanilla, baking powder, and salt and stir until smooth. Finally, add in flour and mix until just incorporated. Set aside.

In a small bowl, whisk granulated sugar and ground cinnamon together.

Sprinkle half of cinnamon sugar evenly into bottom of prepared pan.  Press dough on top of cinnamon sugar.

Sprinkle remaining cinnamon sugar on top and bake for 25-30 minutes, or until edges are lightly golden.
Place pan on a wire rack to cool completely.

Store airtight at room temperature for up to 3 days.

Buttery, Cheese, Garlic Bread Machine Rolls

These were very tasty--and best served hot!  They do warm up well.

Buttery, Cheese, Garlic Bread Machine Rolls

adapted greatly from

For rolls
1 cup milk
1 large egg
4 T butter
3 cups all purpose flour 
1 tablespoon sugar
1 1/2 teaspoons active dry yeast
1 1/2 teaspoons salt

For garlic butter
4 T butter
1/2 teaspoon garlic powder
1/2 teaspoon dry parsley
1/4 teaspoon salt

6 string cheese sticks (each cut into thirds to get a total of 18 pieces)** Beth used 1" x 1" chunks of mozzarella cheese

Place milk, egg, butter, flour, sugar salt and yeast into the bread machine pan.  Set it for dough setting and start.  

In the mean time, place remaining 4 tablespoons butter in a small microwavable bowl and microwave until melted. Stir in garlic powder, dry parsley and salt. 

Brush the bottom and sides a 9 x 13 inch baking pan with a light coating of the garlic butter and set aside.

After the dough is done, transfer onto a work surface, cute into 18 equal pieces. Gently roll each piece into a loose ball, pat into 3-inch disc, place one piece of  cheese, fold the dough over to enclose the cheese, press the edges with your fingertips to seal. Repeat with remaining dough and cheese.

Place dough in the prepared pan, in 3 rolls of 6. Brush the tops lightly with a coating of garlic butter (if butter has thickened, then microwave for a few seconds to melt ). Wrap pan tightly with a clean kitchen towel or plastic wrap and let rise in a warm place for 30 minutes.

Preheat oven to 400 degrees.

Brush the roll tops again with a coating of garlic butter.

Place pan in the middle rack of the oven and bake for 25-30 minutes or until tops are deep golden.

Remove pan from oven, place on a wire rack and immediately brush the roll again with a coating of garlic butter

Apple Cranberry Coleslaw

This was a tasty coleslaw.  It was very creamy, so I would add more coleslaw mix or see the bold at the end of the recipe.

Apple Cranberry Coleslaw

1 14 oz. bag 3-color coleslaw mix
1 large apple chopped
½ c. dried cranberries
½ c. chopped walnuts
4 green onions sliced

¾ c. lowfat mayo
¾ c. plain yogurt 
6 Tbsp. honey
¾ tsp. dried, ground ginger

Combine coleslaw ingredients in a large bowl.
In a small bowl, combine dressing ingredients and mix well.
Pour dressing over coleslaw and stir until evenly coated.
*For a less creamy coleslaw, use ½ c. mayo, ½ c. plain yogurt, ¼ c. honey, and ½ tsp. ginger.

Oreo Cheesecake Brownies

I was having company and knew she loved chocolate.  I had everything on hand.  So yummy!

Oreo Cheesecake Brownies

For the brownie layer
2 1/2 cups granulated sugar
1 1/4 cups unsalted butter (2 1/2 sticks), cut into small pieces
1 3/4 cups unsweetened cocoa powder
1/2 teaspoon kosher salt
4 large eggs
1 cup all-purpose flour
1 teaspoon vanilla extract
For the Oreo cheesecake layer
16 ounces cream cheese (2 blocks), softened
2/3 cups granulated sugar
2 tablespoons cornstarch
3 large eggs
3 tablespoons heavy whipping cream
2 tablespoons vanilla extract
16 ounces Oreo chocolate creme sandwich cookies (1 family-size package), broken into pieces

Make the brownie layer:
Preheat the oven to 325 degrees F and lightly mist a 9-inch by 13-inch baking pan with non-stick spray.

Melt butter.  Add sugar, cocoa and salt. Stir until combined.  Add the eggs, one at a time, stirring after each addition until completely incorporated.  Stir in the flour and vanilla, and transfer the batter to the prepared pan.
Bake for 30 minutes. Cool slightly before topping with cheesecake mixture.

Make the Oreo cheesecake layer:
Preheat the oven to 350 degrees F.
Place the cream cheese, sugar, and cornstarch in a large mixing bowl, and beat on medium speed until creamy.  Add the eggs, one at a time, scraping the bottom and sides of the bowl after each addition.  Stir on low speed until completely incorporated.  Stir in the cream and vanilla, and pour the mixture over the partially baked brownies.

Top with Oreos and bake for 15 minutes, then lower the oven temperature to 250 degrees F, and bake for an additional 35-40 minutes, or until the cheesecake is set around the edges and just barely jiggly towards the center.

Cool completely (or preferably, chill overnight) before cutting into bars.

Garlic Grilled Shrimp Skewers

 I made these to go with grilled steak.  They were delicious!  Will do this again for sure!

Garlic Grilled Shrimp Skewers
adapted from

3  pounds large shrimp
3/4 cup olive oil
1/2cup fresh cilantro finely chopped
4 t dried parsley finely chopped 
10 cloves garlic minced
3 tablespoon lemon juice
1 teaspoon salt
1teaspoon black pepper
pinch cayenne pepper adjust to spice preference

Add the olive oil, lemon juice, herbs, garlic, and spices to a small mixing bowl and whisk together.

Place the shrimp in a bowl and pour 3/4 of the marinade on top of the shrimp. Mix together gently until the shrimp are well coated.

Cover the bowl and marinate the shrimp for 30 minutes to an hour.

Thread the shrimp on the skewers and make sure to get all the good garlic and herbs from the bowl and spread on to the shrimp.

Heat a grill or grill pan on medium high heat.

Once the grill is hot, place the shrimp skewers on the grill and cook the shrimp for 2-3 minutes each side, or until they turn pink and opaque. This took longer for me!
Remove the shrimp to a plate and spoon the remaining marinade on top before serving

Crock Pot Mississippi Beef and Noodles

This turned out so very yummy.  Even Kathleen, who rarely eats meat ate TWO servings!

Crock Pot Mississippi Beef and  Noodles

adapted from

3 lbs beef roast, cut into pieces and fat trimmed
1 Packet Ranch Dressing Mix
1 Packet Brown Gravy Mix
1/4 Cup Butter
6 Pepperoncini Beth used 1/4 c sliced and 1/4 c juice
3 1/2 Cups Beef Broth
2-12 oz Bags Reames Frozen Egg Noodles

Place roast in a 6 quart slow cooker.  Sprinkle with mixes and place butter in the middle of the roast
Place pepperoncinis and juice around the roast.  Pourbroth around the outside of the roast.

Cook on low for 8-10 hours until fork tender.

Taking two forks, shred roast and mix well with juices.  Add frozen noodles, mixing well to submerge noodles in liquid.

Cover and cook on high for 1-1.5 hours until noodles are tender.

White Chocolate Cranberry Pecan Rice Krispie Treats

I was looking for a different rice krispie recipe.  This was the BOMB!  

White Chocolate Cranberry Pecan Rice Krispie Treats

4 tbsp. salted butter
5 c. mini marshmallows
5 c. Rice Krispies cereal
1  12 oz pkg. white chocolate chips divided
1 c. dried cranberries divided
1 c. chopped pecans divided

In a large pot over medium heat, melt the butter.  Add mini marshmallows, stirring until soft and melted.
Stir in cereal, 1 c. white chocolate chips, 3/4 c. dried cranberries, and 3/4 c. chopped pecans.

Press evenly into the bottom of a lightly greased 9x13-inch pan.

In a small microwave-safe bowl, heat the remaining white chocolate chips at 20-second intervals until melted and smooth.  Drizzle over the bars. Beth put in a qt ziploc bag and cut the end off to drizzle.  Sprinkle with remaining cranberries and pecans.
Allow to set, and cut.

One Pan Greek Chicken

 This was quick and easy to put together.  We really liked it.  I used what I had on hand(see bold)

One Pan Greek Chicken

adapted from

1 red pepper cut into 2 inch pieces
1 yellow pepper cut into 2 inch pieces
1  onion cut into eighths
2 cups cherry tomatoes or 2 c chopped tomatoes
1 can artichoke hearts, drained
1 lemon sliced
2 large chicken breasts, cut in half and then half again horizontally
2 cloves garlic crushed
1/4 cup olive oil
1 1/2 tbsp balsamic vinegar
1/2 tsp  paprika
1 tsp dried oregano
1/4 tsp salt
1/2 tsp pepper
2 tbsp chopped fresh basil or 2 tsp dried
2/3 cup kalamata olives 1 can black olives
1/4 cup chopped feta 

Preheat the oven to 400 degrees Fahrenheit.
In a large baking sheet or roasting tray, add the chopped peppers, onions, artichoke hearts, lemon wedges and tomatoes.

In a bowl whisk together the garlic, olive oil, vinegar, paprika and oregano. Pour 1/3 of the sauce over the veggies, sprinkle with salt and pepper and toss until well coated. Place the chicken pieces on top of the veggies and brush sauce. Bake in the oven for 25 minutes.

After 25 minutes, add in the feta, chopped basil and olives. Pour the remaining sauce over the tray and return to the oven to bake for another 5-10 minutes. Check the chicken to ensure its no longer pink. Sprinkle with basil and serve.

 Kathleen has made this at least 3 times already this season.  I don't drink coffee so have had this over tea.  It is very good.


1 cup heavy whipping cream
4 tbsp canned pumpkin puree
2 tbsp sugar free vanilla syrup
1.5 tsp cinnamon
1/2 tsp nutmeg
Cold brew coffee--or tea
Optional: pumpkin spice to sprinkle on top

In a bowl, combine whipping cream, pumpkin, vanilla syrup, cinnamon and nutmeg. Mix together with a hand mixer for 5 minutes, or until thick and frothy.

Add cold brew coffee over ice, sweeten if you like, and then add pumpkin cream over top. 1-2 tablespoons of the pumpkin cream goes a long way flavor wise!

TIP: This recipe makes a LOT, plenty for leftovers to use another day!

I used the last of my frozen rhubarb to make this.  We LOVED it!  Served it with cool whip!


adapted slightly from
1/3 cup sugar
3 eggs, separated
1/2 cup vegetable or neutral oil
1/4 cup milk
3 cups rhubarb, chopped
1 tsp baking powder
1 tsp salt
1 cup all purpose flour
1/2 cup sugar
1/3 cup butter, chopped
powdered sugar to top (optional)

Preheat oven to 350.  
Coat springform pan with cooking spray.

In stand mixer, whip egg whites to firm peaks

In separate large bowl, mix egg yolks, oil, milk, and mix with whisk.  Add in 1 1/2 cups of chopped rhubarb.  Using an immersion blender, blend rhubarb until incorporated into liquid.  Whisk in 1/3 c sugar, baking powder, and salt.  Add flour 1/4 cups at a time and mix well.  Fold in egg whites and gently mix.

Pour batter into springform container.   Add the rest of the  rhubarb uniformly and allow to sit on top.
Sprinkle 1/2 c sugar over the top evenly.    Evenly spread butter over top.
Bake 45 minutes.

Use a toothpick and place directly in center. If it comes out clean, remove. If not, bake for 5 more minutes and try again. Repeat until done.

Once done, cool for at least two hours.  Sprinkle with powdered sugar and serve.

Crockpot Chicken Cordon Blue

I made this up from a few recipes I saw. I had all the ingredients on hand. We liked it and some ate it over rice.

Crockpot Chicken Cordon Blue

3-4 chicken breasts, cubed

ham pieces to cover chicken( I used left over spiral cut ham that I had frozen)

swiss cheese to cover

1 can cream of chicken soup

1 c milk

salt and pepper

1 box stove top(or other brand) stuffing, dry

1 stick butter, melted

Prepare crockpot with liner or spray with cooking spray.  

Place cubed chicken in the crockpot.   Cover with ham and then top with swiss cheese.

Mix milk, soup and salt and pepper together.  Pour over the cheese.  

Sprinkle dry stuffing over the soup mixture and drizzle the butter over that.  

Cook for 4-6 hours on low or high 2-3 hours.

Big Mac Sloppy Joes

I needed something quick and easy before we had Bible study here one night.  I had all the ingredients for this.   We liked it.  I adapted the recipe by deleting the mayo and adding more dressing.  

Big Mac Sloppy Joes

adapted from

1 lb ground beef
1 cup Thousand Island dressing
1 tsp salt
1 tsp pepper
1/2 cup sweet pickles, diced
1 cup yellow onions, diced
1 cup cheddar cheese, shredded
4 large sesame seed hamburger buns
1 cup iceberg lettuce, shredded. optional

Cook the ground beef, drain and add Thousand Island dressing, salt and pepper to the pan.
Stir well until all of the ground beef is coated in the dressing.  Add the diced pickles and diced onions to the pan.  Stir well again and reduce heat to low.

Toast the buns.

Add the shredded cheddar to the ground beef pan and stir just until the cheese is combined with the meat.
Spoon the ground beef mixture on to the bottom buns.

Sprinkle shredded lettuce on top of the meat and then cover with top bun.

Summer Broccoli Salad

I saw this recipe and knew we had to try it.  We LIKED it!   The blueberries and apples made us think SUMMER!

Summer Broccoli Salad

1 ½ pounds fresh broccoli cut into bite-size pieces
1 cup fresh blueberries
¼ cup finely chopped red onion
½ cup dried cranberries
¼ cup sunflower seeds
1 large apple chopped into bite-size pieces
1 tablespoon lemon juice

For the homemade dressing:
1 cup plain Greek yogurt I use full fat, low fat will also work
¼ cup honey
1 tablespoon lemon juice
2 teaspoons apple cider vinegar
1 tablespoon poppy seeds

Place broccoli, blueberries, red onion, cranberries, and sunflower seeds in a large bowl. In a small bowl, toss apple with 1 tablespoon lemon juice. Add to the big bowl with the salad.

In a small bowl, whisk together all dressing ingredients. Pour dressing over the salad and toss gently to combine. Salad may be served immediately or refrigerated until serving. It will last for 2-3 days in the refrigerator.

Saltgrass Steakhouse Bread for the Bread Maker

Don and I had gone to Saltgrass after church a few weeks ago and that visit made me want to make bread!  I wanted to use my bread maker, so I greatly adapted a recipe.   We LOVED it!

Saltgrass Steakhouse Bread  for the Bread Maker

1/4 cup warm water
1 1/2 cup diet dark soda, flat
1/4 cup vegetable oil
1-2 teaspoons lemon juiced
1/4 cup honey
2 1/2 cups whole wheat flour
2 cups all purpose flour
1/2 teaspoon salt
2 teaspoons dry active yeast

To the bread maker, add all ingredients according to your directions.  I start with liquids and end up with yeast.    Set it on dough setting and let run.  

When the dough is ready, place it on a floured board and cut in half.  Form into two round loaves and place them on greased cookie sheets.   Score twice on top of each loaf with a knife, 2 1/2 inches long.  
Cover loosely and let rise until doubled, about 30-45 minutes.  

Bake at 350 for 30 minutes.   Rub with butter after taking out of oven.

Banana Cream Coffee Cake

 I found this and had all the ingredients to make it for church a few weeks ago.  It was liked by all!

Banana Cream Coffee Cake

Recipes(Amish) on Face Book

1 box yellow or white cake mix
1 3.4 ounce box banana cream pudding
1/2 cup milk
1 cup sour cream
3 eggs
3 ripe bananas mashed
1/2 cup sugar
1 teaspoons cinnamon
1/2 cup chopped walnuts

Mix the cake mix, pudding, milk, bananas, sour cream and eggs for a couple minutes with an electric mixer.

Pour half of the batter in the bottom of a greased 9x13 pan.

In a small bowl, combine the sugar, walnuts and cinnamon.  Sprinkle half of the sugar mixture over the cake mixture.

Add the rest of the batter and sprinkle with remaining sugar mixture.  

Bake at 350 degrees for 35-40 minutes or until done.

Whatchamacallit Candy Bar Copycat

These were a tasty bar.  My caramel got too hard, so see my notes in bold.  

Whatchamacallit Candy Bar Copycat

adapted from

1 12.3 oz box Peanut Butter Captain Crunch or Reese Puff Cereal
4 cups miniature marshmallows
11 tbs salted butter, divided
12 oz semi sweet chocolate chips
1/2 cup light corn syrup
1/2 cup sweetened condensed milk
1 cupbrown sugar

For the Crunch Layer

Coat an 9 x 13 baking pan with non stick cooking spray.
Melt 3 tbs butter in a large saucepan.  Add 4 cups mini marshmallows stirring constantly until completely melted.  Remove from heat.  Add cereal to the marshmallow mixture and stir until all the cereal is coated. Turn that mixture into the greased baking dish and press the cereal mixture down.

For the Caramel Layer

In a medium sized bowl melt one stick of butter in the microwave. Add the sweetened condensed milk, corn syrup and  brown sugar and whisk until combined. Microwave and cook on high for 5 minutes. 

Test for doneness by dropping a bit of the caramel in ice cold water.  If it can be formed into a ball, it is done.  If the caramel is too soft microwave it for another 30 seconds. You want it the consistency of peanut butter. Allow the caramel to cool for about 10-15 minutes so it is spreadable. Spread the caramel mixture over the peanut butter cereal mixture.** Err on it being too soft.  I cooked it for 6 min as per original post.  The caramel was too hard after putting it on the bars. 

For the Chocolate Layer

Melt chocolate chips in the microwave for 1 minute.  Stir well and spread on top of caramel mixture.    Let cool completely before cutting and serving.

Nana’s Famous Green Beans

 I had about 2 pounds of fresh beans to cook.  This was a great tasty recipe!

 Nana’s Famous Green Beans

6 slices of bacon
2 pounds of rinsed and trimmed fresh green beans
1/2 cup diced yellow onion
1 1/2 cups chicken broth or water
salt and pepper to taste

Cut the bacon into small pieces and cook over medium heat in a heavy 3 qt saucepan until the bacon is fully rendered.    Add the onions to the grease and saute with bacon until transparent.
Add green beans and pepper and stir well.  Add chicken broth and reduce heat to low.

Cover and continue cooking the green beans for 30 minutes up to two hours, stirring occasionally. Make sure there is liquid in the bottom of your pot so that the beans don’t get scorched.

Check for seasoning levels and add salt and pepper if necessary.

Dora's Rice Krispie Bars

 This recipe is from an elderly friend from Racine, WI.  We have been making these  since I was a kid.  I had some cookies and cream Rice Krispies and used them in this recipe--you can see the dark spots in the picture.  They were delicious!

24 oz marshmallows(or more) 

12 c Rice Krispies

1 stick butter

Melt butter and then add marshmallows and stir until melted.   Add cereal and press into a buttered 9 x 13 pan.  These are very thick.

Pumpkin Bread

This was a great, easy tasty recipe.  It is from my newest Amish cookbook.  

Pumpkin Bread

3 c sugar

1 c vegetable oil

4 eggs

1 15 oz can pumpkin

1/4 c water

3 1/2 c flour

2 t baking soda

2 t salt

1 t baking powder

1 t nutmeg

1 t allspice

1 t cinnamon

1/2 t cloves

In a large bowl, mix together shortening and sugar.  Beat well.  Add eggs and beat well.  Add the rest of the ingredients.  Divide into 2 greased loaf pans.  Bake at 350 for 40-60 min.

Large Batch Homemade Mac and Cheese

I had a 32 oz box of macaroni that I wanted to make.  I took the recipe and made it a large batch!  I had leftover brisket that we mixed with Dr Pepper BBQ sauce and served it over the mac and cheese.  YUMMO!

Large Batch Homemade Mac and Cheese 

32 oz elbow macaroni uncooked

Cheese Sauce:
8 T butter
1/2 c flour
2 t sea salt
1 tsp garlic powder 
4 cup  milk
1cup sour cream 
8 cups shredded cheddar cheese
12 t pepper

Cook elbow macaroni according to package instructions. Be sure to add ¼ tsp salt to the water used to boil the noodles. Drain, and set aside.

Mix flour, pepper, sea salt, and garlic powder together in a small bowl. Set aside.

In a medium saucepan over medium heat, melt the butter.  Add flour mixture and whisk to combine.
Cook for 1 minute until mixture is slightly brown.  Add 1 cup milk and whisk until the mixture is smooth.
Add sour cream  and whisk until smooth.

Cook on medium-high heat until the mixture is thickened (about 3-5 minutes). Do not let it boil.
Once mixture is thick (sticks to the back of the spatula), reduce heat to low and add cheese. Whisk until cheese is melted and mixture is smooth. Taste and add more salt/seasoning if desired.

Add cooked pasta to the pot of cheese sauce and stir until the sauce is evenly distributed.

Let the mac and cheese cool for 3-5 minutes or until the cheese sauce has thickened a little bit and sticks to the noodles. 
Serve warm!

Dr. Pepper Barbecue Sauce

This is a delicious bbq sauce.  we mixed it with leftover brisket and served it over mac and cheese!

Dr. Pepper Barbecue Sauce
adapted slightly from

12 oz Dr. Pepper We used diet
2 cups ketchup
3/4 cup brown sugar
1 tablespoon Worcestershire Sauce
1/2 teaspoon liquide smoke
1 teaspoon coarse salt
1 teaspoon chili powder
1/2 teaspoon granulated garlic We used garlic flakes

Add all ingredients to a large sauce pan and whisk to combine.
Place over medium-high heat and cook, stirring often until mixture just starts to bubble.
Lower to simmer and cook 5 minutes or until sugar is dissolved.
Store in an airtight container in the refrigerator until ready to serve.

Hawaiian Bread For Bread Machine

 This made great toast!  I didn't really taste a lot of pineapple/sweetness.  Maybe next time I would do 1 cup juice and 1/4 c milk.

Hawaiian Bread For Bread Machine
adapted from

6 oz can pineapple juice
1 egg
2 1/2 tablespoons olive oil
4  tablespoons sugar
4 cups flour 
1/2 cup milk
2  teaspoons yeast

Place ingredients in bread pan in order listed.

Insert bread pan into bread machine and set to light crust, two pound loaf.

Check after a minute or two and see if dough looks too dry. If so, add another tablespoon of milk. If dough looks too wet, add a tablespoon or two of flour.

Allow bread machine to work. As soon as bread is done remove and allow to cool completely before cutting. Store in airtight container or bag. See post for helpful tips on baking and cutting bread.

Patriotic Snack Mix

Jenna made this for her July 4th trip to the beach.  Very tasty.

Patriotic Snack Mix

adapted from

1 cup red candy melts
1 cup blue candy melts
8 cups Rice Chex cereal divided
6 Tbsp confectioners sugar divided We used way more
1 shareable bag ,red white & blue M&Ms
2bags white chocolate covered pretzels  We used Flipz

In a microwave safe bowl melt red candy melts on 30 second increments --stirring in between, until melted and smooth.

While the candy is melting place 3 tablespoons of powdered sugar in a large zip close baggie, and lay out a piece of parchment or wax paper for cooling the cereal.  

Pour the melted chocolate over 4 cups of Rice Chex.  Stir to coat.  Spoon the cereal into the baggie and gently toss and shake the bag to coat the cereal with powdered sugar. 

Spread evenly across the prepared wax paper or parchment to cool and harden.

Repeat with the blue candy melts and second cup of Chex.

In a large bowl combine the Chex,  pretzels and  M&M’s.  Gently stir to evenly distribute & serve!
Store in an airtight container.

Marinated Charred Green Beans

We doubled this recipe and were glad we did.   I loved the ease of making these on the grill.  I think we had the grill temperature too low so we cooked them longer.  

Marinated Charred Green Beans
Eating Well July/August 2021

3 tablespoons extra-virgin olive oil
3 tablespoons white-wine vinegar
1 clove garlic, grated
1 tablespoon finely chopped fresh oregano
1 teaspoon ground cumin
½ teaspoon salt
½ teaspoon ground pepper
12 ounces green beans, trimmed

Preheat grill to medium-high.

Whisk oil, vinegar, garlic, oregano, cumin, salt and pepper in a large bowl.

Place beans in a grill basket. Grill, stirring occasionally, until slightly charred and tender, 10 to 12 minutes. Transfer to the bowl and toss to coat with the dressing. Let stand at room temperature for 10 minutes before serving.

French Onion Zoodle Bake

 I had this recipe or one similar in my try file for a long time.  I finally made it and we really liked it!

French Onion Zoodle Bake

adapted from

2 1/2 cups zucchini noodles 
1 sweet onion, sliced thinly
1 teaspoon granulated splenda
1 teaspoon dried thyme
2 tablespoons butter
1/4 cup beef broth 
2 teaspoons Worcestershire sauce
1 cup fontina or parmesan cheese, grated
1 teaspoon salt 
1 teaspoon pepper

Preheat oven to 400 degrees.

Melt butter. Place onion into skillet and cook for a few minutes. Add salt, pepper, sugar/splenda, Worcestershire sauce, and thyme. Stir and cook for another couple of minutes. Add beef broth and cook until onions are golden brown about 12 minutes.   Add zucchini noodles to this and mix well.  

Place noodle mix in baking dish that has been sprayed with cooking spray.   Top with cheese and place in the oven and bake for about 20 to 25 minutes or until golden brown.

Oreo Brownie Bars

I felt like baking---and it is HOT outside,  These are super easy to make and taste so yummy.  The recipe calls for cookie chunks, but I used these and they worked great, no mess!

Oreo Brownie Bars

1 - 9x13 dry brownie mix, DRY
8 Tablespoons unsalted butter, softened
1 large egg
1 teaspoon vanilla
14 ounce can chocolate sweetened condensed milk
1 3/4 cups Oreo cookie chunks, divided we used crumbles
3/4 cup chocolate chips, divided
3/4 cup white chocolate chips, divided

Preheat the oven to 350 degrees. 
Spray a 9 x 13 pan with nonstick spray.

Mix together the dry brownie mix, butter, egg, and vanilla until a soft dough forms. Press it evenly into the bottom of the prepared pan.

Sprinkle 1 1/2 cups cookies chunks and 1/2 cup of each chocolate chip over the dough.

Drizzle the sweetened condensed milk slowly over everything. Use a knife to gently smooth it out and try to cover everything.

Sprinkle the remaining cookies and chips over the top. Bake for 35 minutes. Do not under or over bake these bars. They will be gooey and look under done when you take them out.

Let them cool completely before trying to cut into them. They set up as they cool.

Low Carb Greek Chicken Salad with Tzatziki Dressing

Since it has been so hot here(and everywhere) I wanted to make a salad to feed the family.  I changed the recipe up to use what I had and came up with this.  I put the lettuce, tomatoes, peppers and olives together and let everyone put dressing and cheese on top.  We did not make the pita croutons in the original recipe since we didn't have pita and trying not to eat carbs!  Delish!

Low Carb Greek Chicken Salad with Tzatziki Dressing

adapted from

1 Recipe Greek Chicken Marinade

Tzatziki Dressing
1/2 English cucumber peeled and chopped
1/2 teaspoon salt
1 cup sour cream
1/4 cup mayonnaise
1 garlic clove
1 tablespoon lemon juice
1 tablespoon red wine vinegar 
1/2 tsp EACH dried dill, dried parsley
1/8 teaspoon pepper, ground cumin

1 large head romaine lettuce, chopped (about 8 cups)we used green leaf
1/2 English cucumber peeled, halved, sliced
8 oz. cherry or tomatoes halved
1 bell pepper chopped
1/2 onion very thinly sliced
1/4 cup pitted black olives
1/2 cup crumbled feta cheese we used blue cheese

Greek Chicken
Prepare chicken according to recipe directions.

Blender Tzatziki Dressing
Add chopped cucumbers to a fine mesh sieve and sprinkle with ½ teaspoon salt. Stir and let sit 15-20 minutes (this prevents the dressing from becoming watery). After 15/20 minutes, use the back of a spoon to push cucumber down against sieve to release excess water.

Add cucumber along with all remaining Tzatziki Dressing ingredients to a blender and blend until smooth. Season with salt and pepper to taste if needed. Refrigerate until ready to serve - best if chilled at least 1 hour, the longer the better.

Add romaine, cucumber, bell peppers, tomatoes olives, and onions to a large salad bowl and give it a good toss. Now you can either toss in the chicken, dressing,and feta, OR if expecting leftovers, serve them on the side and let everyone dress their own salads. Enjoy!

Greek Chicken Marinade

This marinade is GREAT!  The chicken had such great flavor.  We used the chicken in a salad.

Greek Chicken Marinade

1 pound boneless skinless chicken breasts pounded to 1/2" thickness

Greek Chicken Marinade

3 tablespoons olive oil
3 garlic cloves, minced
1 tablespoon balsamic vinegar
1 tablespoon lemon juice
1 teaspoon dried oregano
1/2 tsp EACH cumin, dried basil, onion powder, sugar,(Beth used splenda) salt
1/4 tsp EACH pepper, paprika

Whisk together all of the Greek Marinade ingredients in a large freezer bag and add chicken. Marinate 4-8 hours..
Remove chicken from fridge and let sit at room temperature 20-30 minutes.

Grill chicken undisturbed for for 5-7 minutes per side, or until chicken is cooked through. (An inserted thermometer should read 165 degrees F.) Remove chicken from grill and let rest 5 minutes before slicing.

Sour Cream Coffee Cake

I have been making this recipe since 1990 when I got it from a teacher while teaching in Trevor, WI.  It never made it to the blog until now.  I made this a few weeks ago and took it to church.  We love this!

Sour Cream Coffee Cake

Steve Voltz

1 c butter(2 sticks)
1 1/2 c sugar
2 eggs

Beat these together until creamy and then add:

1 c sour cream
1 t baking powder
1/2 t baking soda
1 t vanilla
2 c flour

Mix until smooth and fluffy.

Nut Mixture
2 c chopped pecans
1/2 c brown sugar
1 1/2 T cinnamon

Spread half of the cake batter in a greased 9 x 13 pan.  Sprinkle half of the nut mixture over the batter and then spread the rest of the cake batter over that.  

Sprinkle the rest of the nut mixture over the top.  Bake at 350 for 50 minutes.
