Everything Bagel or Pretzel Dip

 I saw various forms of this quick and easy dip recipe.  I made it and we had it with pretzels .  It is quite tasty.

Everything Bagel or Pretzel Dip

8 oz cream cheese, softened

1 1/2 c sour cream

1 1/2-2 T everything bagel seasoning

1/2 t onion powder

1/2 t garlic powder

Beat sour cream and cream cheese together until smooth.  Stir in the other ingredients and serve over bagel chips or pretzels.

Low Carb Bacon Ranch Style Beef Roast

This was a delicious roast.  I ate mine, low carb, without the bun.  Save the pickles to make Sweet and Spicy Pickles( coming next week)

Low Carb Bacon Ranch Style Beef Roast

adapted from

3-5 lb chuck Roast
4-5 slices bacon
½ cup pickle juice
3 tbsp dry ranch dressing
3 tbsp butter
Trim any excess fat from the roast, then place it in the slow cooker and pour the pickle juice over it.

Sprinkle the ranch seasoning on the roast, and then place the butter on top in pieces.

Lay the bacon strips over the roast and wrap the ends underneath it.
Place the lid on the slow cooker and set it to cook on low for 8+ hours.

Once done, Remove and discard the bacon.   Shred the roast an leave in the juice.  Serve in buns topped with cheese, if desired.

Cheese and Red Onion Bread-Bread Maker

I made this yummy bread to go with dinner a few weeks ago.  I added all the ingredients right away and you couldn't see the onions, bacon or cheese at the end.  I will add them later, when the machine beeps to add in extras.  

Cheese and Red Onion Bread-Bread Maker
adapted from
two-pound loaf

1 1/8 C. Water
4 1/4 C. Bread Flour
1 Tbsp. Sugar
1 1/2 tsp. Salt
2 Tbsp Olive Oil
1 1/4 C. Cheddar Cheese, Shredded
1/3 C. Red Onion, minced
2 tsp active dry yeast

3-5 pieces cooked and crumbled bacon, optional

Place all ingredients except cheese and onion in bread maker starting with liquid and ending with yeast.

Set bread maker on medium crust and set it for basic white bread, 2 #--mine is 3 hours and 10 minutes for a 2 # loaf.

Check dough after 5 minutes and add water if it is too dry or flour if it is too wet.  

When it beeps to add in ingredients, add the onion and cheese and bacon is using.

The Best Homemade Waffle

Jenna made these for a Sunday lunch a few weeks ago. They are light and very tasty.

The Best Homemade Waffle

2 cups all-purpose flour
1/4 cup granulated sugar
2 tablespoons cornstarch
1 teaspoon fine salt
1 teaspoon baking soda
1 teaspoon baking powder
1 3/4 cup buttermilk
1 large egg
2 large egg whites
2 teaspoons vanilla extract
4 tablespoons butter, melted, plus more butter for serving
 syrup, for serving

In a large mixing bowl, whisk together the flour, sugar, cornstarch, salt, baking soda, and baking powder. Add the buttermilk, egg, egg whites, and vanilla and stir with a rubber spatula until barely combined. Add the melted butter and stir until just combined.
Cover the batter and let rest for 15 to 30 minutes.

Preheat oven to 250°F. Heat the waffle iron to medium, following the manufactures directions.

For 8-inch square waffles, ladle about 1/3 cup to 1/2 cup batter into each cavity.  Close lid and cook until deeply golden brown on both sides, about 6 minutes or as long as manufacturer specifies.

Monster Cookie Brownies

These were quick and easy and very yummy!

Monster Cookie Brownies

1 box (18.3 oz) brownie mix for 9 x 13 pan (plus ingredients called for on box)

Monster Cookie Dough
1/3 cup creamy peanut butter
2 tablespoons butter, softened
1/4 cup brown sugar
2 tablespoons granulated sugar
1 large egg
1/2 teaspoon vanilla extract
1/3 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup quick oats
1/4 cup miniature chocolate chips
1/4 cup mini m&m's 

Heat oven to 350 degrees. Prepare a 9x13 baking pan and spray with cooking spray,

Prepare brownies according to the direction on the box. Pour brownie batter into the baking pan and set aside.
In a mixing bowl, add the peanut butter and softened butter. Stir with a fork until combined. Add brown sugar, sugar, egg, and vanilla extract. Stir with the fork until combined and mixed together.
Add the flour, baking soda, and salt. Stir just until combined. Add the quick oats, chocolate chips, and m&m's. Stir again until combined.
Drop spoonful's of the monster cookie dough over the brownie batter OR you can use your hands, grab some cookie dough and flatten it out (as best you can) and lay it on top of the brownie batter.

Bake for 25-35 minutes or until done in the center. Use a toothpick to make sure it's not wet in the center before pulling them out. Mine usually take around 30 minutes to cook to my liking.
Let cool in the pan for 30 minutes to 1 hour and then cut into squares. Store any leftover covered at room temperature.

Greek Pasta Salad

Kathleen put this together one night and it was very good. We served it leftover with Italian marinated chicken!

Greek Pasta Salad
16 oz dry penne or rotini pasta,
2 cups cherry tomatoes, sliced in half
1 English cucumber, diced, seeded
1/2 red pepper, finely chopped
1 medium red onion, diced
1 cup pepperoncinis, chopped
8 oz good quality feta cheese, crumbled
Fresh basil, chopped
Coarse ground black pepper

For the dressing: 
1/3 cup red wine vinegar
½ cup olive oil
1 tsp. dried oregano
kosher salt and freshly ground black pepper
2 tsp. fresh basil, finely chopped
2 Tbsp. freshly squeezed lemon juice
2 cloves of garlic, minced or pressed
Pinch of sugar

Cook pasta according to package directions. Drain in a colander, rinse with cold water, and drain again; set aside. In a large bowl, add tomatoes, cucumber, olives, onions, pepperoncinis, feta cheese, and fresh basil. Gently toss together.

Place the red wine vinegar, olive oil, oregano, salt and pepper, fresh basil, lemon juice, garlic, and sugar in a jar with lid, and shake well to mix.

Drizzle dressing over pasta; toss to coat. If you need to, add more olive oil. Cover and chill in refrigerator for 2-3 hours or overnight. When ready to serve, toss the pasta salad again, garnish with fresh pepper and basil, and enjoy cold or at room temperature.

Chicken Marinade--Italian Style

 This was an easy and tasty marinade.  

Chicken Marinade--Italian Style

1-2 # chicken breast

1/2 t salt

1/2 t pepper

1/2 t onion powder

1/2 t garlic powder

1/2 c Italian salad dressing

1/4 c soy sauce

Mix all ingredients together.  Pour over chicken and marinate for at least 2 hours til overnight.  

Grill 7-8 minutes on each side.  Serve over salad or with a vegetable.

Rendering Lard

Jenna "made" lard with her friend while she was in Arkansas.  They had butchered a pig and decided to do this!  



Ground fat

Put instant pot on sauté mode. Add the ground animal fat to the pot. As it melts, stir. Once all items have floated to the top and look like minced onions, drain the pan through a strainer. Pour the liquid into clean, hot jars .Put hot lids and rings on the jars. The lard will turn white as it cools and the jar seals.

Carne Asada

Jenna found this recipe and we LOVED it! We grilled the meat and served it over salad.

Carne Asada 
adapted from Baking Mischief

1/2 cup orange juice
1/2 cup soy sauce 
1/4 cup lemon juice 
1/4 cup olive oil
2 tablespoons lime juice
2 cloves garlic pressed or diced
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon black pepper
1/4 teaspoon ground chipotle chili pepper OR 1 teaspoon finely chopped, canned chipotle pepper optional
1/2 bunch fresh cilantro chopped, about 3/4-1 cup very loosely packed

Carne Asada Marinade

Combine and stir together all marinade ingredients. Transfer meat into a large plastic bag or container and pour marinade over the top. Marinate for at least 4 hours, up to about 24, flipping the meat once halfway through.

Grill the meat to desired temperature.  Let is sit for 5 minutes before slicing.  We ate this over salad.

1 1/2 pounds flank steak sliced thin
1/4 cup cornstarch
3 Tablespoons vegetable oil
1/2 cup low sodium soy sauce
1/2 cup brown sugar
1/4 cup water
1 teaspoon minced ginger
3 garlic cloves minced
pinch of red pepper flakes
green onions sliced for garnish

In a large ziplock bag add the sliced flank steak and cornstarch. Toss the beef to coat evenly. Heat a large skillet to high heat and add the vegetable oil. Once heated, add the steak in a single layer and cook on each side for about a minute until the edges just start to brown. Once the steak is cooked, remove and set aside on a plate.

In a small mixing bowl combine soy sauce, brown sugar, water, ginger, and garlic. Add the sauce to the pan and bring to a boil. Add the steak to the sauce and allow the sauce to thicken for a couple of minutes. Toss with the chopped green onions and sprinkle with red pepper flakes.

Pecan Upside Down Bundt Cake

I made this for dessert when my mother in law's friends from her church came to visit.  It was a tasty treat!

Pecan Upside Down Bundt Cake

Pecan Topping
1/2 cup butter, melted
1/2 cup brown sugar 
1/4 cup corn syrup
1/4 tsp salt
1 cup chopped pecans--Beth used toasted

Cake Batter

1 box white cake mix
3 large eggs
1/2 cup vegetable oil
1 cup water
3 tbsp sour cream
1 tsp vanilla

Preheat oven to 350 degrees. Prepare bundt pan by liberally spraying it with nonstick spray.

Pecan Topping

Combine melted butter, brown sugar, corn syrup and salt into a medium bowl and whisk until the brown sugar is slightly dissolved. Add pecans and stir until combined. Pour into the bottom of prepared bundt pan and set aside.

Cake Batter

Combine cake mix, eggs, vegetable oil, water, vanilla and sour cream in a large bowl and mix according to package directions. Pour batter into prepared pan and on top of the pecan topping. 

Bake in a 350° oven for 40-45 minutes or until a tooth pick inserted into the center of the cake comes out clean. Remove from oven and place onto a cooling rack for 10 minutes. Invert  onto a cake plate and cool completely. If pecans stick to the bottom of the pan, use a spatula and pat into top of cake.

Store  at room temperature or in the refrigerator for up to 3 days.

Roasted Potatoes-Southwest Style

I was looking for a different potato recipe and had everything for this recipe after tweaking it a bit.  Very tasty!

Roasted Potatoes-Southwest Style
adapted from

6-7 potatoes, diced
2 bell peppers, diced
1 onion, diced
4 Tbsp vegetable oil
1 1/2 tsp chili powder
1 1/2 tsp paprika
1 1/2 tsp cumin
3 tsp oregano
2tsp garlic powder
2 tsp salt 

Preheat oven to 425 and line a jelly roll pan with aluminum foil. 

Mix potatoes, pepper and onions in a large bowl.  Mix all the rest of the ingredients together and pour over potato mix.  

Spread potato and veggies mixture in the prepared baking sheet.

Bake for 35-40 minutes.

Smothered French Onion Pork Chops.

These were very good.  My onions got a little brown since I used thick chops and FORGOT to cover with foil.....

Smothered French Onion Pork Chops

4-6 pork chops
sour cream or french onion dip
french fried onions

Preheat oven to 350.  

Season both sides of pork chops with salt and pepper.  Place in a baking dish.  
Cover the pork chops with sour cream or french onion dip.  Sprinkle french fried onions over top.

Cover with foil and bake 35-45 minutes.

Delicious Orange Cake

I made this to take to a Bible Study where my mother in law used to live,  a week or so ago.  Everyone loved it! 

Delicious Orange Cake

1 yellow cake mix
1 small box(1/3 c) orange Jello(dry)
3/4 oil
1 c orange soda
4 eggs


1-2 c powdered sugar
2 T orange soda
1/2 c orange extract, opt

Preheat oven to 350.  Spray a bundt pan with cooking spray.  

Combine cake mix, Jello, oil, soda and eggs in a mixing bowl.  Beak for 2 minutes, scraping the bowl.  Pour into bundt pan.  

Bake for 35-40 minutes or until tester comes out clean.  

Let stand 5-10 minutes and turn out on a cooling rack and cool completely.

Make the glaze and drizzle over cake.

Parmesan and Garlic Breadsticks-Bread Machine

These were very good.  They were easy to make with the bread machine!

Parmesan and Garlic Breadsticks-Bread Machine

1 1/8 c water

3 T butter, melted

2 T sugar

3 c flour

1 t salt

1 1/2 t yeast

Add all ingredients to your bread machine.  Place on dough setting and start.  When done, cut into 12 pieces and roll out into strips 6 inches long.  

Place on a greased baking pan or two..  Let rise for 30 minutes.  

Bake at 400 for 10-12 minutes.

Brush with a mixture of 4 T melted butter, 1/4 t garlic powder, 1/4 t Italian seasoning and 1 T parmesan cheese.
