Oreo Brownie Bars

I felt like baking---and it is HOT outside,  These are super easy to make and taste so yummy.  The recipe calls for cookie chunks, but I used these and they worked great, no mess!

Oreo Brownie Bars

1 - 9x13 dry brownie mix, DRY
8 Tablespoons unsalted butter, softened
1 large egg
1 teaspoon vanilla
14 ounce can chocolate sweetened condensed milk
1 3/4 cups Oreo cookie chunks, divided we used crumbles
3/4 cup chocolate chips, divided
3/4 cup white chocolate chips, divided

Preheat the oven to 350 degrees. 
Spray a 9 x 13 pan with nonstick spray.

Mix together the dry brownie mix, butter, egg, and vanilla until a soft dough forms. Press it evenly into the bottom of the prepared pan.

Sprinkle 1 1/2 cups cookies chunks and 1/2 cup of each chocolate chip over the dough.

Drizzle the sweetened condensed milk slowly over everything. Use a knife to gently smooth it out and try to cover everything.

Sprinkle the remaining cookies and chips over the top. Bake for 35 minutes. Do not under or over bake these bars. They will be gooey and look under done when you take them out.

Let them cool completely before trying to cut into them. They set up as they cool.

Low Carb Greek Chicken Salad with Tzatziki Dressing

Since it has been so hot here(and everywhere) I wanted to make a salad to feed the family.  I changed the recipe up to use what I had and came up with this.  I put the lettuce, tomatoes, peppers and olives together and let everyone put dressing and cheese on top.  We did not make the pita croutons in the original recipe since we didn't have pita and trying not to eat carbs!  Delish!

Low Carb Greek Chicken Salad with Tzatziki Dressing

1 Recipe Greek Chicken Marinade

Tzatziki Dressing
1/2 English cucumber peeled and chopped
1/2 teaspoon salt
1 cup sour cream
1/4 cup mayonnaise
1 garlic clove
1 tablespoon lemon juice
1 tablespoon red wine vinegar 
1/2 tsp EACH dried dill, dried parsley
1/8 teaspoon pepper, ground cumin

1 large head romaine lettuce, chopped (about 8 cups)we used green leaf
1/2 English cucumber peeled, halved, sliced
8 oz. cherry or tomatoes halved
1 bell pepper chopped
1/2 onion very thinly sliced
1/4 cup pitted black olives
1/2 cup crumbled feta cheese we used blue cheese

Greek Chicken
Prepare chicken according to recipe directions.

Blender Tzatziki Dressing
Add chopped cucumbers to a fine mesh sieve and sprinkle with ½ teaspoon salt. Stir and let sit 15-20 minutes (this prevents the dressing from becoming watery). After 15/20 minutes, use the back of a spoon to push cucumber down against sieve to release excess water.

Add cucumber along with all remaining Tzatziki Dressing ingredients to a blender and blend until smooth. Season with salt and pepper to taste if needed. Refrigerate until ready to serve - best if chilled at least 1 hour, the longer the better.

Add romaine, cucumber, bell peppers, tomatoes olives, and onions to a large salad bowl and give it a good toss. Now you can either toss in the chicken, dressing,and feta, OR if expecting leftovers, serve them on the side and let everyone dress their own salads. Enjoy!

Greek Chicken Marinade

This marinade is GREAT!  The chicken had such great flavor.  We used the chicken in a salad.

Greek Chicken Marinade

1 pound boneless skinless chicken breasts pounded to 1/2" thickness

Greek Chicken Marinade

3 tablespoons olive oil
3 garlic cloves, minced
1 tablespoon balsamic vinegar
1 tablespoon lemon juice
1 teaspoon dried oregano
1/2 tsp EACH cumin, dried basil, onion powder, sugar,(Beth used splenda) salt
1/4 tsp EACH pepper, paprika

Whisk together all of the Greek Marinade ingredients in a large freezer bag and add chicken. Marinate 4-8 hours..
Remove chicken from fridge and let sit at room temperature 20-30 minutes.

Grill chicken undisturbed for for 5-7 minutes per side, or until chicken is cooked through. (An inserted thermometer should read 165 degrees F.) Remove chicken from grill and let rest 5 minutes before slicing.

Sour Cream Coffee Cake

I have been making this recipe since 1990 when I got it from a teacher while teaching in Trevor, WI.  It never made it to the blog until now.  I made this a few weeks ago and took it to church.  We love this!

Sour Cream Coffee Cake

Steve Voltz

1 c butter(2 sticks)
1 1/2 c sugar
2 eggs

Beat these together until creamy and then add:

1 c sour cream
1 t baking powder
1/2 t baking soda
1 t vanilla
2 c flour

Mix until smooth and fluffy.

Nut Mixture
2 c chopped pecans
1/2 c brown sugar
1 1/2 T cinnamon

Spread half of the cake batter in a greased 9 x 13 pan.  Sprinkle half of the nut mixture over the batter and then spread the rest of the cake batter over that.  

Sprinkle the rest of the nut mixture over the top.  Bake at 350 for 50 minutes.

Bacon Cheddar Breakfast Casserole

I made this for lunch a few weeks ago.  It was a quick and easy dish to put together and tasted great!

Bacon Cheddar  Breakfast Casserole

Non-stick cooking spray
2 tbsp extra virgin olive oil
3 cups broccoli florets
3 tbsp water
1 cup shredded cheddar or Colby Jack
6 slices bacon cooked and crumbled
4 large eggs
1/3 cup heavy whipping cream
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp dried thyme
1/2 tsp dried oregano
Salt and pepper to taste

Preheat oven to 350 F and spray an 8” x 8” or 9 x9 casserole dish with non-stick cooking spray. Set aside.

Heat the olive oil in a large nonstick sauté pan over medium heat. Add the broccoli and water and cook for 2-3 minutes, or just until the broccoli softens slightly and turns bright green.

Remove from heat and drain thoroughly. Transfer the broccoli to prepared casserole dish and spread into a uniform layer. Top with shredded cheese and crumbled bacon and side aside.

Whisk the eggs with the heavy cream, onion powder, garlic powder, thyme, and oregano. Season with salt and pepper, as desired. Pour the egg mixture over the broccoli, cheese, and bacon and bake for 17-23 minutes, or until the casserole is set and lightly golden brown on top.

Remove from oven and let cool for 10 minutes before slicing.

Cheesy Low Carb Zucchini Casserole

This was so very tasty!  I would make this every night if I could get zucchini to grow in my garden down here---it is that good!

Cheesy Low Carb Zucchini Casserole

2 zucchini, thinly sliced 
1 small onion, thinly sliced
1 cup grated cheese 
1/2 cup sour cream
1-2 tbsp cream
1 teaspoon garlic powder
salt and pepper to taste

Grease a 9 inch baking pan with butter

Place overlapping zucchini slices in baking dish, layering it with onions and cheese between each layer

In a small bowl combine sour cream with garlic powder, salt and pepper and just enough cream to thin the mixture.

Spread sour cream mixture over the zucchini

Bake at 350 degrees for 35 minutes or until casserole is brown and bubbly on top.
Let rest in oven for 10 minutes.

Candied Pecans

Jenna made these to go on a salad with strawberries that Don requested for Father's day.  YUM

Candied Pecans

4 c pecan halves
1 egg white
1 tsp vanilla
2 teaspoons water
2/3 cup sugar
1/3 cup brown sugar
2 teaspoons ground cinnamon
1/2 teaspoon salt

Preheat oven to 300 F. Line a large baking sheet with a silicone baking mat or parchment paper and set aside.

In a large bowl, whisk egg white, vanilla extract, and water until foamy, about 2 minutes. Fold in pecans and stir until completely coated in egg white mixture.

In a separate medium bowl, whisk together granulated sugar, brown sugar, cinnamon and salt. Pour over the top of the pecans and toss until pecans are completely coated in cinnamon sugar mixture.

Spread the pecans onto the prepared baking in a single layer. Bake for 35 to 40 minutes stirring after the first 15 minutes, then every 10 minutes thereafter until the sugar mixture has hardened.

Remove the candied pecans from the oven and let cool on the baking sheet before transferring to an airtight container.

3/4 c bottled Ranch dressing
2 T flour
salt and pepper
4 chicken breasts
cheddar cheese

Mix Ranch, salt and pepper to taste, and flour together.  Dip chicken breasts in the Ranch mixture and put in a greased casserole dish.  Sprinkle cheddar cheese over the top.  

Bake at 350 for 25-45 minutes, depending on how thick the chicken is.

This was a light and airy cake.  Could be used as a coffeecake, too.  Very good.

2 1/4 cups flour
2 cups brown sugar
1 cup creamy peanut butter
1/2 cup butter, softened
3 eggs
1 cup milk
1 teaspoon vanilla 
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup chocolate chips

Preheat oven to 350°. Coat a 9″x 13″ baking pan with cooking spray. Set aside.

Mix flour, brown sugar, peanut butter, and butter.(Beth used a pastry blender) Remove 1 cup of mixture and set aside.

Combine all ingredients and pour batter in to baking pan.

Sprinkle top with reserved crumbs over top and then sprinkle chocolate chips. Bake 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Quick Green Beans

I got some fresh sour cream and onion powder while visiting an Amish store--many uses, but most often used over popcorn.  I saw this recipe and tried it.  Simple and DELICIOUS!

2 or 3 12.5 oz cans green beans, drained

2 T butter

2 T sour cream and onion powder

In saucepan, melt butter and add green beans.  Simmer for 10 minutes.  Add the sour cream and onion powder and stir well before serving.

Breakfast Pizza II

This pizza has a different 'sauce' than the one I usually make.  We made this when cousin Mike was here and I used leftover brisket instead of bacon.  YUMMO!

Breakfast Pizza II

2 cans crescent rolls or pizza dough

1/2 # bacon, cooked and crumbled

2 c shredded cheese

4 eggs

1 1/2 c sour cream

2 T fresh parsley or 2 t dried parsley

2 T onion, diced

Preheat oven to 425.  Pat out crust into a pizza pan--Beth used 2 cans of crescent rolls and a 17 inch pan.

Bake for 5-8 minutes until lightly browned.

In a bowl, beat eggs, sour cream and parsley until smooth.  Pour over crust as the 'sauce'.  Add cheese and sprinkle with bacon and onions,  

Bake for 20-25 minutes until puffy and lightly browned.

Death By Chocolate Cake

I made this while Don's cousin Mike was visiting from CA.  We all loved this!

Death By Chocolate  Cake

For the Cake:
1 pkg. (15.25 oz.)  chocolate cake mix
Ingredients listed on the box to make the cake
1 box (3.56 oz.) instant chocolate pudding mix
4 cups milk, divided
1 jar (12.8 oz.) chocolate ice cream topping

For the topping:
1 box (3.56 oz.) instant chocolate pudding mix
1 container (8 oz.) frozen whipped topping, thawed
1 Giant (6.8 oz.) chocolate candy bar, grated

Bake the cake according to package directions using a 9x13-in. baking pan.

Mix the pudding mix with 2 cups of milk in a medium bowl. Poke holes in the hot cake with the round end of a wooden spoon and slowly pour this mixture over the cake, trying to fill the holes.

Microwave the chocolate topping (with the lid off) for about 45 seconds or until it pours easily. Pour evenly over the top of the cake. Let the cake cool completely.

In a medium bowl, combine the second pudding mix with the additional 2 cups of milk. Carefully fold in the whipped topping. Spread the mixture evenly over the top of the cake. Sprinkle the grated candy bar over the top.

Refrigerate for at least 4 hours. Store the cake (covered) in the refrigerator.

6 c quick oats

2 c brown sugar

2 t salt

4 c whole wheat flour

1 c coconut

1 1/2 t baking soda

1 1/2 c butter, melted

1 c chocolate chips

1 c chopped pecans

Mix together dry ingredients except the chocolate chips.  Add melted butter and mix well.  Place in 2 greased  jelly roll pans and back at 375(original recipe says 400, but I felt it was too hot) for 30 minutes.  Stir frequently.  Add chocolate chips when cooled.

Cream Cheese Jell-O Salad

6 oz(2/3 c) Jell-O, any flavor
8 oz cream cheese
1/2 c sugar
8 oz cool whip

Prepare Jell-O according to directions.  Chill until partially set(about 2 hours).  Beat together cream cheese and sugar.  Fold in the cool whip.  Beat this mixture into the Jell-O and then chill until firm.

Monster Cookie Bars

 I made these for a Memorial Day get together and then found out there was a birthday girl, so decorated the 'cookie' cake with this frosting.  Everyone liked these.

1/2 c butter, melted
18 oz jar creamy peanut butter
1 1/4 c brown sugar
3 eggs
1 t Karo syrup
4 c oatmeal
2 t baking soda
1 c M&M's
1 c chocolate chips

Heat oven to 350.  With a mixer, mix all ingredients and then stir in the M&M's and chocolate chips.  Place in a jelly roll pan and Bake for 15-20 minutes.  If using a 9 x 13 pan, bake longer.  Do NOT overbake.

Soft Pretzel Sandwich Wraps

While on our trip to WI, we stopped in Arthur IL to drive through the Amish community.  I bought a new cookbook and adapted this recipe for us.  They were tasty.

Soft Pretzel Sandwich Wraps

Merlyn Helmuth  Beachy Family Favorites

1 1/4 c warm water
1/4 c brown sugar
1 T yeast
1 t vanilla
1 t salt
4 c flour
hotdogs--Beth used fully cooked Johnsonville sausages with cheese and jalapeno and cheese
cheese slices

Mix all ingredients together except the meat and cheese.  Roll dough as thin as possible with a rolling pin.  The mat I rolled this out on was 24 x 18.  I didn't get it quite that large

Cut into 5 x 7 pieces.  Place a piece of cheese(Beth used 1/2 of a slice), sausage and then top with ketchup or bbq sauce.  Roll up and press edges together tightly.  I was able to get 12 sausage rolls.

Bake at 350 for 20-25 minutes until brown.  Can be frozen.
