Jenna here, I never can make pancakes....up until now! Some friends from Wisconsin were here and we were talking about sourdough. Julie mentioned she had a great recipe and shared it with me. I added the vanilla, because everything is better with a little extra vanilla! These were so so good and had a little crispiness to them that we loved!
Sourdough Pancakes

2 cups Sourdough Starter, fed
2 eggs
1/4 cup coconut oil, melted
2 tablespoons honey
1/2 teaspoon salt
1 teaspoon baking soda
1-2 teaspoons vanilla
coconut oil for frying
To avoid sticking, preheat the skillet before letting the batter hit, and flip the pancake just one time!
Mix the starter, eggs, coconut oil, honey, salt, and vanilla in a glass bowl. Add the baking soda last and the starter will foam up. Preheat a tablespoon of coconut oil in a skillet. We used a cast iron skillet. After the pan is hot enough to produce a sizzle, pour a ladle full of batter right on top of the hot oil. At this point, turn the stove down a bit for the pancake to cook through without burning. Flip only one time after the top is nice and bubbly. Cook another 30 seconds and enjoy!
